Emilia’s Crafted Pasta, St Katharine’s Docks

Since 2015 I worked for Emilia’s on a part time basis as a part-time in-house designer in supporting the fit outs of their restaurants (5 in total as of 2025).

Within a tiny design team some of my commitments were of a managerial level. I assisted the director in finding and employing the other designer, checked and signed off joinery and finishes drawings before their construction or manufacture, advised upon the contractor’s appointment and made decisions in response to unexpected situations on site.

As part of this work I independently prepared and submitted an external AC unit planning application including a heritage statement., which was subsequently approved by the Tower Hamlets council. My work for Emilia’s pasta supplemented my commitments in practice and at university in providing me opportunities to coordinate design and construction process, employ designers and manage risk. Moreover, it revealed my interest and ability in specialising: deepening knowledge on projects of a particular type. Rather than being solely responsible for interior design, I was coordinating the approaches for ventilation, plumbing, electrics, carpentry, metal structures, external works and other elements that physically constituted the restaurants.
